What are some common flavours and ingredients used in sweet/savoury dishes?

Thai people are certainly not afraid of using seasoning and flavour in their cuisine. This is clearly shown by their usage of various herbs and spices. Below, I will list some common spices and ingredients used in Thailand's national dish, Pad Thai: 

Chilli Pepper​s: Placed inside the dish for flavouring and a little bit of burn.

Peanuts : Often left on the side as a condiment as well as a part of the dish.

Tamarind Juice: Used for flavouring in the dish, is also found in other dishes such as Mee Krob (crispy Thai noodles) to enhance flavour.

Fish Sauce: Used for flavouring in the noodles, is also found in dishes such as Som Tum.

Garlic: Also used for flavouring in the dish. However, garlic chives may be occasionally put on the side.

Shallots: Also included in fried rice and salads, adds to the flavour profile in general.

Dried Shrimp

Lime: The juice is put in the dish, or occasionally wedges will be served on the side for flavouring.

Common Ingredients/Flavours: Sweet

    Thai people, while skilled at creating savoury dishes, are also in possession of a sweet tooth. Because of this, they have also created many sweet dishes to their liking. I will now also go over some common staples within Thai desserts:

Coconut Milk: Used commonly in general. Found in dishes such as Thai coconut pancakes and Thai sticky rice with mango.

Sticky Rice/Glutinous Rice: Also used in several Thai desserts.

Palm Sugar: Used in Thai coconut balls amongst other desserts.

Bananas: Also used in a fair few Thai desserts as they have a high natural sugar content. 

Sesame Seeds: While a less common addition, these are sometimes sprinkled on top of a dessert.
